Goatein Baking Mix
For the final assignment in my farm to market class I was put on a team with 3 other students, 2 business marketing majors and one food science major and we were tasked with coming up with a value added product in partnership with a local montana business. The business we were paired with was Amaltheia Organic Dairy LLC, a family owned and operated goat dairy and produce farm in Belgrade Montana.
Reasearch and proposition
Through our research at Amaltheia, we identified three key challenges:
Shelf Life: Goat cheese production is seasonal, but Amaltheia needed a product with a longer shelf life to ensure year-round availability, independent of the goats' production cycles.
Whey Waste: During the process of making chèvre cheese, approximately 80% of the raw product becomes whey—a byproduct that Amaltheia currently has no use for and gives away.
Market Perception: Goat cheese often feels foreign and intimidating to the cow dairy-centric American markets, creating a barrier for widespread adoption.
Our solution was to develop a baking mix made from goat whey, transforming this nutrient-rich byproduct into a long-lasting and versatile product. This baking mix not only minimizes waste but also introduces a protein-packed option for home cooking and baking, designed to appeal to a broad audience with its familiar and approachable format. There were also little to no competitors in the business landscape for such a product so we saw it as the perfect opportunity to aid Amaltheia in securing an untapped market. With a strong vision in mind, we set off to create and test our product.
The food scientist of our group created pancakes, chicken and waffles, and biscuits. We brought the products to a memory care facility (highgate), a children’s dance class, and to our teachers and peers in the farm to market class receiving a 85% approval rating on taste.
Dieline, rough mockups, and design intention
Upon receiving a great deal of praise for the product, it was time for me, as the sole designer of our group, to execute the packaging for Goatein Baking Mix. The goal was to create a design that aligned with the pre-established visual language of high-end baking mixes, such as Kodiak Cakes and Snoqualmie Falls, while seamlessly extending the strong branding already present in Amaltheia’s products.
The design features a bold logo and catchy phrasing, creating a strong billboard that draws attention from afar. It strikes a balance between appearing safe, friendly, and honest—qualities essential for opening consumers up to the idea of goat dairy as an approachable, alternative option. The color palette is striking and well-contrasted, effectively communicating the product’s qualities while ensuring it stands out on a shelf without clashing with the norms of baking mix packaging.
Amaltheia’s message as a family-owned and operated business is highlighted on the side of the package, reinforcing their authenticity and values. Additionally, the packaging emphasizes the product’s cruelty-free and baggage-free nature. It supports local farmers, promotes sustainable practices, and offers a healthy, protein-packed option that’s easy on the stomach for those who are lactose-intolerant.
By combining these elements, the design fulfills its mission of being both eye-catching and approachable, encouraging consumers to see goat dairy as an exciting, reliable alternative in their kitchens.
On the back of the box are few recommended recipes by our talented food scientist, though the mix can theoretically be used to make hundreds of unique recipes.
